Thai Pineapple Fried Rice:

Thai Style sweet and spicy Pineapple fried rice with Corns, Paneer and Prawns. Thai pineapple fried rice gives a refreshing twist on our normal fried rice. The tangy & sweet pineapple with the spices added is just amazing. Golden grains of rice jeweled with chunks of juicy pineapple, cashews, and currants create a taste that will send you straight to paradise! The dish is very nutritious, healthy and quick. Best for Lunch or Dinner.

Ingredients

2 tbsp vegetable oil or sunflower oil
2 eggs beaten with pinch of salt
2 cups cooked and chilled brown rice/ or long grain rice/ leftover rice (chilled)
1 cup finely chopped Pineapple
100 gms prawns/Shrimps (optional for vegetarians)
1 medium sized onion (sliced)
Baby corns
2 Tomatoes chopped
Spring onions
Corn Kernels
1/2 cut Lemon
Tofu or Paneer
Chilli Garlic Paste
- 1tbsp Soy Sauce
Salt to taste


Steps:

Step 1: Heat the pan and add 1 tbsp oil. Pour in the eggs and stir until they are scrambled and lightly set. Transfer eggs to empty bowl and clean the pan (if required).




Step 2:  Add 1 tbsp of oil to the pan and add the prawns to fry until it becomes light brown. Keep it aside with the eggs.




Step 3: Dice and chop all the vegetables mentioned above. Also, chop the pineapples and keep it ready.




Step 4: Reduce the heat to medium, add some oil, when oil is heated add all the vegetables.  Fry for 2-3 minutes, then add the chopped pineapple until the liquid is evaporated and the pineapple is caramelized on the edges.



Step 5: Add the rice to the pan and stir to combine. Cook well until the rice is hot, about 3-4 minutes.



Step 6: Pour the scrambled eggs and prawns back into the pan and stir to combine. Add Chilli Garlic Paste, squeeze the lemon juice and add some salt. Continue to stir for 2 more minutes. Add 2 tbsp Soy sauce and mix it for another 1 minute.



Step 7: Garnish with coriander leaves and serve hot.




Tips:

- To MAKE IT VEGETARIAN - Skip the eggs and Prawns, heat the pan and start with step 3.
- For Non-Vegetarians - You can also add more items like finely diced chicken and meat, etc. as per your wish.
