Ingredients
- 1/2 tbsp Garam masala powder (गरम मसाला पाउडर)
- 1-2 Bay leaves (तेज पत्ता)
- 1/2 tbsp Coriander powder (धनिया पाउडर)
- 1/2 tbsp Cumin powder (जीरा पाउडर)
- finely chopped coriander leaves (बारीक कटा हरा धनिया)
- 1 Bidyagi Chilly/Dried red chilly (सूखे लाल मिर्च)
- 1 tbsp Kashmiri Red chilly powder (कश्मीरी लाल मिर्च पाउडर)
- 1/2 tbsp Red chilly Powder (लाल मिर्च पाउडर)
Ingredients
- 4 boiled eggs
- 3 medium-sized Onion finely chopped (बारीक कटा हुआ प्याज)
- 3 tsp garlic finely chopped (बारीक कटा हुआ लहसुन)
- 3 tsp garlic finely chopped (बारीक कटा हुआ लहसुन)
- 1 tbsp Ginger Garlic Paste
- 3-4 chopped green chilly (as spicy you want) (कटी हुई हरी मिर्च)
- 4 tbsp cooking oil
- Salt to taste
- 2 medium-sized Ripened Tomato (पके टमाटर)
- 1/4 cup yogurt/curd (optional)
- 1 tbsp Turmeric powder (हल्दी पाउडर)- 1/2 tbsp Garam masala powder (गरम मसाला पाउडर)
- 1-2 Bay leaves (तेज पत्ता)
- 1/2 tbsp Coriander powder (धनिया पाउडर)
- 1/2 tbsp Cumin powder (जीरा पाउडर)
- finely chopped coriander leaves (बारीक कटा हरा धनिया)
- 1 Bidyagi Chilly/Dried red chilly (सूखे लाल मिर्च)
- 1 tbsp Kashmiri Red chilly powder (कश्मीरी लाल मिर्च पाउडर)
- 1/2 tbsp Red chilly Powder (लाल मिर्च पाउडर)
Steps:
Step 1: Take the boiled eggs. Peel it off and poke the egg with a Fork or knife so that the masalas get inside properly.
Step 2: Make the Tomato puree by grinding the ripened tomatoes into the mixer grinder.
Step 3: Chop the onions, green chilly and coriander leaves. Also chop the garlic and keep it ready.
Step 4: Take a pan, add 1-2 tbsp of oil and shallow fry the eggs and keep it aside.
Step 5: Now, we will start making the gravy. Take the pan and add some 2 tbsp of oil. Add cumin seeds (jeera), bay leaf, cinnamon stick and dried chilly. Saute it for 15-20 sec and then add chopped garlic to it. Saute it till the garlic starts turning brown.
Step 6: Now, add onions and chilly to it and fry it till the onion turns golden brown.
Step 7: After the onion starts turning brown, add ginger garlic paste to it. Fry it till the raw smell of ginger garlic goes off. Then add salt, turmeric powder to it.
Step 8: Add 1 tbsp Kashmiri chilli powder, 1/4 tbsp chilly powder, 1/4 pepper powder, 1/2 tbsp cumin powder, 1/2 tbsp coriander powder, 1/2 tbsp garam masala powder. Cook the masala properly for about 4-5 mins on low flame.
Step 9: Once the masala is properly cooked, add the tomato puree to it. Cook it until the oil starts separating from the sides and it is properly cooked.
Step 10: Once it is cooked properly, add 1/2 glass of water and cook it for sometime.
Step 11: Add the boiled eggs to it and cook it for sometime.
Step 12: Garnish with coriander leaves and your egg curry is ready to be served.
Tips:
- You can also add 1/4 cup of curd to it after the tomato curry is properly cooked. It enhances the taste.
