Lasuni Baingan :

A North Indian style, soft and mushy brinjal(baingan) fry which can be best served with chapatis or phulkas. This dish needs minimal ingredients. An easy to cook recipe. 
I have fallen in love with this curry when I tried it for the first time. The taste of this curry is amazing and flavors definitely are new to my tastebuds and there is some unique flavor in this curry. Give it a try and I am definitely sure that you will love the taste of it.

Ingredients

- 1 bottle shaped Brinjal (Baingan)
- 2 medium sized Tomatoes
- 7-8 Garlic Cloves
- 2-3 dried Red Chilly
- 3-4 tbsp Cooking oil
- Turmeric Powder
- Salt to taste

Steps: 

Step 1: Cut the Brinjal (Baingan) into small pieces. Chop tomatoes and garlic. 

                                  

The ingredients are now ready for cooking.

Step 2: Heat the pan/kadhai, then add cooking oil to the pan. Once the oil is heated, add the chopped garlic to it. Stir for sometime and then add the dry chillies. Make sure the garlic is not burnt.

                                  

Step 3: Once it starts changing color, add the Brinjal to it and mix it. After 2-3 mins, add salt to it and mix it well. Now, cover the pan with the lid and cook it at low flame.

                                  

Step 4: Keep checking and stirring at intervals. Once you see that the brinjal started turning little mushy, add the tomatoes to it. Also add turmeric powder. Mix it well. Again cover the lid and cook it at low flame.

                                  

Step 5: Once the brinjal and tomatoes turns soft and mushy, you can off the flame. Your Lasuni Brinjal is now ready to be served with Chapatis or Phulkas.

                                  



Tips: 

- Cooking at low flame makes the curry soft and mushy properly.
