Ghee Chicken Masala Curry :

Step 3: Mix it properly and keep it aside for 30 mins of Marination.
Steps for Gravy:
Step 1: Heat a pan/Kadhai. Add 2 tbsp of oil and 1/2 cup of ghee. Add all whole spices to it.
Step 2: Add the chopped onions and green chilly. Till the onions turn golden brown, blend the tomatoes and make a smooth puree and keep aside.
Step 3: Stir well and cook it until the onions turn golden brown.
Step 4: Add 1/2 tbsp of ginger garlic paste and fry well until the raw smell of it disappears completely. Make sure the paste is added after the onions turn golden brown. Add 1 tbsp of turmeric powder, salt to taste. Add tomato puree to it and cover it for 5-8 mins on low flame or till the oil starts separating.
Step 5: Add the remaining powdered masalas (cumin (jeera), coriander(dhaniya), 1 tbsp chicken masala, kashmiri red chilly powder, 1/2 tbsp black pepper powder). Stir and fry for about 3-4 mins on medium flame.
Step 6: Now, add the marinated chicken to it and fry well.
Step 7: Fry for 2-3 mins and mix the masala properly with chicken. Now, cover and cook it for 8-10 mins on low flame and stir it at intervals. Once the chicken is fried properly, add 1 cup of water to it or enough water to partially cover the chicken. Cover and cook on a medium flame until chicken is soft and tender(10-15 mins), depending on the size of the chicken pieces. Check whether the chicken is softened by pricking a fork into it. If you see the flesh started separating the bones, it means the chicken is cooked properly. Taste the curry and check if the salt is proper or not. If not, add according to taste.
Step 8: Add a pinch of Garam Masala powder and coriander leaves to it. Cover the lid and turn off the flame. Uncover it after 5 -10 mins only. Serve hot with Jeera rice, Naan, chapati, etc.
Tips:
- Use hot water for gravy, this will take less time for the chicken to cook and also the chicken will be soft. Adding cold water to chicken sometimes makes the chicken hard.
- Add a pinch of sugar to the onion while frying, this will take less time and add extra flavour to the gravy.
